Hello, you can think of them as "process variables" and "workitem fields". Variables stay inside of the process instance, they are never passed to the participants (except when their values are copied to fields). Fields are the payload of the workitems. Variables follow scoping rules inside the process instance that are similar to the scoping rules of a classical programming language. Fields are immediately available to the expressions (and the participant expressions who pass them (the workitem) to the [real] participant). Variables are mostly used for control-flow in the process instance. Fields are mostly used to gather data or communicate data from / to participants. Fields are also used for control-flow in the process instance.
