The "Ubiquiti Products" is the right one. Profiles usually limit for which devices images are generated and which packages to include in the image (as an override to the default). The generic profile builds all images (so that one is fine, too), but the default package selection might not 100% match what you need. You can also always change that in menuconfig (or might need to, if you already have a .config - the default selection get's only applied the very first time).
