If you're mainly looking for something that's easy to get started with,
Alfa Network's AP121U can actually be acquired with OpenWRT pre-installed
from a few different vendors, e.g.:

I've seen these used as a whitebox hardware platform for OpenWRT-based products
(e.g.: WiFi Pineapple Mark IV, Reaver Pro). They've got only two ethernet ports
(and those are 100BaseT, not gigabit), but they're decent little boxes
if that fits your need.
