You are right, for security reasons it is preferable that I set up an
alert to anticipate the handling of my certificates that will expire on weekend.
It is still good to know that it is possible. And I understand that this is not 
included by default.

No - and why? You should implement proper monitoring to get alarmed
BEFORE a certificate expires! OpenXPKI already comes with an expiry
report and a workflow that can be used to send emails/create tickets on
expiration.

But if you really want to implement such a feature - we did something
like that for a customer some time ago... you can either attach a
"connector" to the validity node of the certificate (using the @ syntax,
have a look at the workshop slides or the eligibility check samples)
that returns the expected datetime string or add a custom activity that
calculates and insert the expected "notafter" date into the context.
