Openfire hasn't seen much activity since it moved out of focus of Jive
Software's business goals. The latest release is from May 1, 2009, and
it contains a major bug in the setup assistant (which I got bitten by
just yesterday), which should be rather easy to fix. So don't expect
any updates soon.

Falling horridly out of date ...  ejabberd isn't bad in terms of a nice
interface and nice services available to admins to manage users.
currently ejabberd is top of my list, with jabberd2 following close
behind, with spectrum as the transport gateway provider.

I haven't looked into prosody. ejabberd is the best option, that I am aware of, for hosting lots of virtual domains (although it would be nice if they added the ability to add domains on the fly without requiring a restart of the server.)
