One thing that many people *DO* want is to have more easily parsed packet 
output.
That is, that the result of parsing an IPv6/UDP/QUIC/{+injected crypto key}/HTML
content is a nice CBOR sequence of CBOR maps of what was inside.
(This is may be more-or-less IPFIX. I don't have the expertise to say for sure)

But, that's a different effort.
