I did this on another server and can't remember the exact details, but it
went something like this:

1) In SQLPlus create a rename.sql file with:
 Spool rename_export.bat
 select 'HOST REN export_file_name
export_file_name_'||to_char(sysdate,'MMDDYYYY')
  FROM DUAL;
 spool off;

2) In your script have two commands:

   sqlplus user/password start rename.sql
   call rename_export.bat
