In fact, you can use both an "id" and and "ref" attribute on a processor output. So your example becomes simply:
<p:param type="output" name="data"/>
<!-- processor producing data --> ... <p:output name="data" id="data0" ref="data"/> ...
<!-- processor using that data too --> ... <p:input name="data" href="#data0"/> ...
This behavior must have been added fairly recently, otherwise Matt wouldn't have had to use that workaround with the oxf:identity processor.

If I have a pipeline starting with something like
<p:param type="output" name="data"/>
then I use a processor that produces this document like in
<p:output name="data" ref="data"/>
But what if I want to use this output document of the pipeline also as input for an own processor in the same pipeline? Now I use:
<!-- processor producing data --> ... <p:output name="data" id="data0"/> ...
<!-- processor using that data too --> ... <p:input name="data" href="#data0"/> ...
<!-- binding data to the pipeline output -->
<p:processor name="oxf:identity">
<p:input name="data" href="#data0"/>
<p:output name="data" ref="data"/>
</p:processor>
Is there a simpler way to do this?
