I worked with Cocoon previously and switched to Orbeon for precisely the reasons that Erik gives. I also found Orbeon support - an important commodity with an open source project - to be better.

That matrix is not necessarily 100% up to date. In my opinion (I am one of the developers of Presentation Server) the main features you are getting with Presentation Server over Cocoon are:
o Commitment to XForms (see the compliance matrix here: http://www.orbeon.com/ois/doc/reference-xforms-compliance)
o XPL, the XML pipeline language implemented by Presentation Server (we are currently working on a specification for XPL 1.0). In this case there is almost no comparison possible with Cocoon pipelines.
o Stronger separation of concerns between pages (based on model + view), forms, page flow, and processes (implemented with XPL).
o Commitment to Relax NG, XSLT 2.0, XPath 2.0, and possibly other specifications which have so far been largely ignored by Cocoon.
o Arguably, better organized documentation and tutorial.
If you have a requirement such as using XForms, you would probably have a hard time with Cocoon, because even though there have been some now-deprecated XForms-related efforts in the past, as well as Chicoon, a third-party integration of Chiba and Cocoon, the mainstream forms solution for Cocoon is not XForms-based.
The reality is that it is hard to choose between software platforms without comparing them yourself (or trusting somebody else's comparison). The ideal approach would be for you to start prototyping with both and convince yourself that Presentation Server is the best solution ;-)
