Marianne, Unfortunately, there is no one 'manual' to go to for this information, that I know of currently. There are several excellent references that would help in identifying your plants. Depending on the country of origin of your plants, these should help.
Opera Botanica No. 130, 1997. A revised subdivision and bibliographical survey of Dendrobium (Orchidaceae) by Pedersen, Wood and Comber. Opera Botanica No. 131, 1997. The Genus Dendrochilum (Orchidaceae) in the Philippines-a taxonomic revision. Dendrochilum of Borneo, 2001. Jeffrey Wood. Orchids of Sumatra, 2001. J. B. Comber. These cover the three major areas of the genus, and should provide you with enough information to identify your plants. However, three of these books are very expensive, and at least one is now out of print, so collecting them altogether would be expensive and would require some effort. What I would suggest is that you contact a botanical garden near you and see if they will do the identification for you. If you are in the USA, Marie Selby Botanical Gardens does identifications for a fee.
