Maras ice cream, the orchid ice cream of Turkey, is believed to have been 
made since the 18th Century and has a consistency like taffy, with an 
aromatic taste...
the only ice-cream not served by the scoop!

The most important ingredient is 'salep,' which enhances the flavor of 
Maras ice cream and distinguishes it from all other ice creams. Salep is 
obtained from the knobby root [tubers] of... wild orchid[s] and ground in a 
mill, then the frozen mixture is beaten with metal rods and once served, it 
is eaten with knife and fork.

Due to the elastic consistency of the salep, you can pull the ice cream 
several inches before it breaks. The ice cream is creamy... and has a 
smoothness and elasticity that is surprisingly chewy and delicious. Rumor 
[that's is the right word !] ... has it that Maras ice cream is an 
aphrodisiac!"
