In an article published in Arditti[ed.]'s book, Orchid Biology : Reviews 
and Perspectives, III, Leonard J. Lawler writes :
"North America : A species of Habenaria was used to provide salep."

The author gives the following references :

Hogg, R.,

Yearsley, G. G.
1976            Orchids---not just pretty flowers. Orchid Review 84 : 231-233.

1) If you have access to these references, could you indicate which species 
Lawler refers to ?

2) If you are aware of other sources in which the names of species used to 
produce salep in North America are mentioned, please provide the references.
