In an article published in Arditti[ed.]'s book, Orchid Biology : Reviews 
and Perspectives, III, Leonard J. Lawler writes :
"North America : A species of Habenaria was used to provide salep."

The author gives the following references :

Hogg, R.,
1858            The vegetable kingdom and its products. W. Kent, London.

Yearsley, G. G.
1976            Orchids---not just pretty flowers. Orchid Review 84 :
231-233.

1) If you have access to these references, could you indicate which
species 
Lawler refers to ?

2) If you are aware of other sources in which the names of species used
to 
produce salep in North America are mentioned, please provide the
references.

Hi All.
          I just bought a Brasada that has a name tag that says Hilo
Sunrise. I know it is a cross of a Brassia x Ada, and with that name it
probably was made in Hawaii. Any Ideas of the parentage? I have an old
Orchidwiz but it is not in there.

   Jerry on Vancouver Island were it is now Warm and Sunny!!

The OR article did not give the species name but gave as reference
Castle, 
L. 1887. Orchids, Their Structure, History and Culture. Unfortunately
this 
reference does not list the species name either, just says salep is made 
from a species of Habenaria in North America.
