 The two things that pop into my mind:

1. Molecular Models with Origami by Yoshihide Momotani.  I have a copy of
this book and it covers an impressive range from modular molecules to
tessellations that represent proteins.  One of the last models is several
bits together that create HIV, including a long folded strip of RNA.

2. Chris-Yuki Itoh.  His display in the exhibition at the Origami USA
convention this year included many internal organs and some surgical
equipment.
