In those models were glue IS used in a particular step, what symbol is
normally used to indicate where to glue?

I'm not sure I've seen one. From this assortment, the first one would work.

the one with the brush applicator and bottle may be more old fashioned, yet
works.
Glue stick, with the lid beside it, tipped, as if in use, works, too, maybe a
bit harder to draw than the outline of an Elmer's type bottle.
