Hi Kathy, if you're open to ellies w just a suggestion of 4 legs (not fully done 4 legs) then both the Trumpeting Elephant & Jackson's Elephant are fun & easy to fold. If these origami models don't need to stand & will be hung as decoration, then even better.
For a 1-yr olds bday party couple years ago, I made several easy animal models (Yoshizawa butterfly, simple mouse, trumpeting elephant, twist fish, & a few others I'm not recalling presently) out of large 15"-18" square paper in pastel colors. We then hung the various models in the party room. Altho simple models usually don't have tremendous detail, that was advantageous & perfect for a kiddie bday party where the extra large simple shapes were easily & happily recognizable by the kids & adults alike :) I also got to teach the same models to the kids present, all except the trumpeting elephant of course :) Best Vishakha ps I don't have Sok's book handy w me right now but I've folded that model before & I recall it being fun & easy to fold.
