Maybe not an every day problem for everyone, but as an engineer, I frequently fold paper to make rough prototypes or to create reusable templates for angles or polygons. This is especially useful for visualizing weird geometries, since 2D images on a computer screen only get you so far.
Paper's great for this, since it's readily available, cheap material that can change to keep up with new designs.
