I think the style of language used should be in context. If it is an academic journal, formal grammar should be used. If it is for a club newsletter, the formal rules can be relaxed. If it is an email with friends, the style can almost be conversational.
In terms of traditional models, I don't think it should matter too much. Unless you are describing (and discussing) a specific object in a formal academic sense, I don't think you need to worry about capitals and italics (unless you want them to visually stand out for other reasons). But then I note you used the word "gonna" earlier on - that's very informal English. Winnie
