I'm not sure why the photo-step folds make it look so complex... it's not that hard a model to fold. Not sure where to find the original diagrams either.

I like the traditional Peace Dove. I recall many years ago OUSA (FOCA?)
had it as one of its holiday models and that year I made my X-Mas cards
using small colored versions taped to white folded card stock. They
were a big hit...
