Hi Steven (and anybody else who is interested): We decided to "drop" IA64 only due to the lack of man-power. I do not think there were any technological issues preventing us from supporting it -- we just didn't have the hardware/resources, and thus it is not currently listed as being supported in 5.x.
If somebody has the hardware (i.e. more than one IA64 servers), and resources (rebuild all the SRPMs and test), then it is definitely do-able. I am not sure the current status of SystemImager support on the IA64, but if you run into issues, the SystemImager developers should be able to help out in that regard. So, if anybody is interested in getting IA64 (re)-supported in future OSCAR releases, please let us know!
