You can have a script executed post-installation by SIS by including a "USER EXIT" stanza in the /etc/systemconfig/systemconfig.conf file in the image. Make sure the script gets copied into the image as well. For more detail see the systemconfig.conf man page.
For additional adapters, you can add the stanzas for those adapter to the systemconfig.conf file also. This isn't integrated into OSCAR, but should do what you need to do. I'm a little concerned about changing /etc/modules.conf though. You shouldn't need to do this in most cases. Is what's getting put in there incorrect for you? If so, we may have to make a change to System Configurator.
