Then how about I install on one disk, after that installation I manually set the RAID1 mirror. Has anybody successfully done this before?

Not easily. SATA and LVM are the two primary issues.

The next version of SystemImager, a critical components w.r.t. the
features you want, looks like it will support SATA and LVM for images.
Once that is completed, OSCAR can support that too.
