Wad, VMWare ESXi is a completely closed solution, it is almost impossible to know details about what is the system installed with it. So in theory this should be possible but not currently supported. Furthermore, i do not think VMWare is interested in any kind of collaboration to work on such a support. For the deployment of the VMs, if ESXi supports VM-boot from CDROM or emulating a PXE boot, the VM can be deployed using OSCAR like a normal machine (i do that with KVM and Ubuntu 9.04, it works fairly well).
In other terms, we have a basic and experimental support for others virtualization solution via OSCAR-V. For instance, it is fairly easy to deploy KVM and virtual machines based on KVM using OSCAR, i am actually in the process of stabilizing that prototype so anyone can use it. If you want more details about that, please let me know (i am not sure you are interested in any other virtualization solution).
