I assumed that you can simply take a look at the versions of packages since they should indicate where they're coming from - from unstable (http://bison.csm.ornl.gov/repos/unstable/rhel-5-x86_64). Similar situation was present with the stable repo. I'm using recommended CentOS 5.
In the end I built my own RPMs based on your SPEC file with the following corrections:
