I've found ethereal to be a little less
user friendly, as it tends to involve reading a dump after you've done
whatever you're trying to trace

You never used live capture in ethereal then.

Ethereal (or tethereal for command line version) takes a little  getting used to but it pays dividends in the long run. You may well want to be capturing AMF now but then in the future some day you may want to capture XYZ. In ethereal just use an approriate capture filter or even write your own plugin (rather than waste time writing a custom proxy!).
