The sources of these apps (java for server side, fla and actionscript for the clients) should be somewhere in your red5 directory. The exemples will learn you rather directly how to make the main Red5 features work... You may also have a look at the server side API which is quite clear and well documented ( I don't know if this version is really up to date : http://dl.fancycode.com/red5/api/ ; you can probably generate the current one from the red5 distrib ) You also have good ressources here : http://osflash.org/red5 (and especially here : http://osflash.org/red5/help )
