Another way to help your chance of getting paid is to put expiration code,
or watermarking, in the project until you're paid.

Watermarking would just mean a 10% alpha logo or "BETA" etc. on top of
everything, and that can get annoying for some clients. Expiration lets them
view the project as is, but will refuse to run after 15 days, or something
like that. 

In the latter case, make sure you factor in the agreed upon payment
schedule. For example, you may need to keep the app alive for 30 or 45 days.

In all cases, make sure these techniques are known upfront and any
expiration dates made clear.
