Oh, I see... and I've found my problem now (I was applying that option
to the wrong camera's rendersurface).
Anyway, I can now run my application in fullscreen without the gnome
panels! Thanks.
But, I guess I lose the ability to switch to a proper gnome-like window,
right? ie, if I leave fullscreen, I get a smaller window in the middle
of my screen, but it has no border or titlebar. I can't move it or bring
another window in front anymore.
...seems like you can't have it all ;)

Just try running with this config file:
Camera "Camera 1"

RenderSurface "OpenSceneGraphViewer"
{
Visual { SetSimple }
Border off;
OverrideRedirect true;
}
Lens {
Frustum -.032 .032 -.026 .026 0.1 10000.0;
}
}

Oops. Disregard that last comment. I had it in the wrong place
(after my
viewer.realize() ). I moved it earlier in the code, and now I get a
segfault when running.
gdb output:
