Raffi - I say "Do it!" I've done this a few times with a slight twist. I set the room up as if it were an event - Circle of chairs - posters - paper/markers/tape in the center - Time/place matrix
Then I've done a normal opening including opening the Marketplace. Each time I have done this, I have had less than an hour allotted and have found that to be plenty of time to end with whatever Q&A necessary. I figure, the worst case would be that they would decide not to do OS in which case the right thing would have happened.
