I'd suggest uMap https://umap.openstreetmap.co/en/ . That will allow
you to draw routes over existing map tiles, which is probably what they
want to do (I'm guessing the "local walks from their premises" aren't
signposted on the ground). If you want to create your own map tiles,
then https://switch2osm.org/manually-building-a-tile-server-16-04-2-lts/
would be useful, but it is more work - you'd need to set up a server to
host the tiles.
