The video doesn't quite show the difference between those two styles, but it's obvious if you switch between them. Also, Configure map/Map Style has a description of each style. In a nutshell, the OsmAnd style is for general purpose use; Touring view is more contrasty and attempts to display more detail for a given zoom level. I've been experimenting with it in night mode (during the day) as a means to extend battery life while hiking.
