Maybe I've figured this out. Direct-to-point navigates to the destination via any intermediate destinations you've set. Whereas Straight line seems to ignore the intermediate destinations. The Aircraft profile uses Straight line as its default. None of the profiles use Direct-to-point as a default, but there are obvious uses for it, including off-trail (cross-country) hiking.
