There is also a lot of tools to convert osm data into other format, such as the mobile ready formats for mapsforge or obf for Osmand, for instance. Osmosis can be used to prepare files from osm extracts, but not for contour lines, due to timestamp and version check.
This is also why, I guess, osmosis 0.35 is still well described in the wiki.
