Talking to jabber/xmpp directly is not supported as a direct output method for ossec, but should not be hard to do with a script. I would suggest starting out with this blog post on how to have ossec send tweets: http://www.ossec.net/dcid/?p=168. Changing it to send via xmpp should be straight forward.
As for the alerts.log file format it is multi-line and their are no plans to change it at this time.
