Hi,
I see 2 aspects in your problem :
- the detection of moisture content : you can start with radiometric
indices dedicated to water detection. I am not a specialist so other
people may propose more efficient methods.
- the extraction of the shoreline : this could be done using various
methods : edge detection, segmentation, classification.
For prototyping, using extracts is faster, but with OTB, you should
be able to process full images.
