For setting the output projection, you should do :

-map epsg (this activates the epsg mode)
-map.epsg.code 2157 (this sets the epsg code)

Regarding water cutting, there is unfortunately not much we can do. There is a default elevation value -elev.default which can be used when no value can be retrieved from the DEM, and it is set to 0. Also, it is very important to know if your DEM gives elevation wrt ellipsoid or geoid. If your DEM is already wrt ellipsoid, then you do not need to add the geoid file, and if you do so this may cause misalignement with sea level (in addition to inaccurate location).

I am not sure what is causing the image to take the default values and not the input projection information. Also, the DEM cuts the water portion of the image - this is also not evident in the output image.

Could somebody please help me with this?
