Difficult situation. I assume that he has not grip strength because his triceps won't work. I think I would first recommend a bed rail and then I would come up with a lasso/belt like system that I would harness to the bed rail and then practice use his deltoid and biceps for your advantage by practicing moving his arms into the lasso using shoulder movements and then using his biceps, flex his elbows firmly on the lasso, and finally attempting to roll himself over. Long shot, but worth a try.
