Have a look in 'scripts', you'll find some backup/restore scripts there.
You may well use your usual backup methods, too.

When it comes to Apache, there's little OTRS-specific stuff to backup.
In fact, it depends on how you integrated OTRS with it. I guess, backing
up the configuration directory of Apache would be fully enough.

MySQL comes with some handy tools, f.e. 'mysqldump'. Look inside the
first mentioned scripts to see how it's used.

There's no detailed backup documentation, sorry. Willing to provide one?
