ADMIN -> Sysconfig -> Ticket -> Frontend::Agent::Ticket::ViewCompose
i think your setting should be somethin like that:
$QData{"Salutation"}
$QData{"Signature"}
$QData{"OrigFrom"} $Text{"wrote"}:
$QData{"Body"}
$QData{"StdResponse"}
