In the Config.pm file, set the admin email to what you want.

While this is correct, the preferred method of changing OTRS
configuration is from within OTRS itself.
Go to Admin -> Sysconfig -> Framework -> Core
There you'll find AdminEmail.
Actually, SysConfig is also a great place to find out what
configuration items to change. Just use the search box and OTRS will
find relevant configuration items for you.
