Hi Andrew, Well, it's discussed here, in "setting up the cron jobs" - http://doc.otrs.org/2.4/en/html/x531.html#cronjobs - it discusses which jobs there are and what their tasks are.
Actually you can also set up processing email via procmail - http://doc.otrs.org/2.4/en/html/x1590.html#email-receiving-cmd . You'll need a bit more configuration for it but it will enable you to process mail immediately. You'll need to receive the mail on your OTRS box and then you can pipe it directly into OTRS. You should configure your existing mail server to bounce mail for OTRS to the OTRS machine.
