The counters are cumulative, and that is inherent to the hardware. (It's a
security feature, I believe.)
The simplest solution is just to do the subtraction in your program. We
could also do it in OWFS.
Louis Swart's LCD has counters that are reset by reading, so there is a
stored cumulative property that gets updated every read and can be set with
a write. We could do something like that for the DS2423 if there is
sufficient interest.
