for clarification... looking for something like this

but with only 1 jack in either a rj45 or rj11.  we'll just cut the rest of the 
pins off so it only has three pins and lays flush with the board.  then we'll 
determine what pinout to use after the fact when putting the connector on the 
wire.

If you're talking about a modular plug, you probably use whatever type
is cheapest (RJ-11 probably), and only connect up 3 of the 6 conductors.
The handset cords are smaller, but the RJ-11 seems to be the defacto
standard for a lot of prefab 1-wire products.  There's even a standard
of sorts for wire positions.

I wouldn't recommend punchdown blocks for use in situations where you'll
be disconnecting and reconnecting often.
