I just tried (in Ubuntu 8.10) and both the process (owserver and owfs), and the filesystem are shown. You have to play with the "view" settings to get the right filter.
There is no detailed 1-wire information in the system monitor app (activity, devices,... ) but that information is available from within owfs and creating a monitoring application using a gui toolbox and bash commands (or perl, python, tcl/Tk, php, ...) would be very easy.
