I have exactly the same setup in some places - a DS18S20 on a copper tube, wrapped with tape and under insulation.
When mounting temperature sensors it's usual to put down a little blob of conductive paste: http://www.resol.de/index/produktdetail/kategorie/7/id/50/sprache/en between the sensor and the thing it's sensing.
