You have to either:
1) As you say, modify the existing processors.xml in oxf.jar.
2) Make a copy of the existing processors.xml and add your own processors there. The new copy does not not have to reside in oxf.jar, it can live at the root of your resources. This file must content all the processor declarations of the initial processors.xml though.
An include / import / extension mechanism would be better, of course.
