Just as an FYI, I do this all the time with my Hyper-V images (which I suspect 
you'll also be able to do for Virtual PC*), just remote desktop into them and 
check 'Use all my monitors for the remote session'.

* I can't remember, does Virtual PC allow the virtualized machines to run in 
the background?
