Sure, you'll need an upgrade farm though... Build yourself up a SPS 2003 virtual machine (make it a standalone server) and snap shot it/turn on undo disks. Save your lists as templates and then import them into the new farm or backup the sites you want and restore into the new farm. Install MOSS 2007 on the VM and choose your upgrade method, at which point your lists will be upgrade to 2007.
