Make sure you are running SP2 + October 2009 CU as a minimum.  There were LOTS 
of issues with prior versions.

Subject: InfoPath question

Hi

I currently have an InfoPath form that is published to a library. Once a new 
form is submitted, theres several workflows that start to collect data from 
several users.
Once the users complete their tasks, the columns reflect the changes, but when 
the infopath form is opened, none of the fields have changed.
I have been looking for a solution for this for two weeks now and no luck. Any 
ideas why this happens?
