I usually do this by setting the HorizontalContentAlignment on the ListBoxItem
style, changing it from Left to Stretch.

Collection}">
<ListBox.ItemContainerStyle>
<Style TargetType="ListBoxItem">
<Setter Property="HorizontalContentAlignment"
Value="Stretch"/>
</Style>
</ListBox.ItemContainerStyle>
</ListBox>
Using this approach will allow long lines to continue to scroll horizontally.
